A
collection of its own today from the chefs at the
Omni Nashville Hotel. Each chef was tasked to create a new cookie recipe, that reminds them of the holidays, past and present, that speaks of Nashville and the vibrant city we live in and last but not least has a little southern adult flair to it. Each Chef was highly encouraged to use a minimum of one local product from Tennessee. (

Spiked Sweet Music City Bar – Executive Chef David Harker – “Has heritage in my Canadian roots and a little Tennessee Whisper Creek Sipping Cream in it. I make these with my girls during the holiday, minus the sipping cream of course.”
Pumpkin Spiced Moonshine Debbie’s – Barlines Chef Joe Denomme – Great winter holiday party cookie for adults and takes Joe back to his childhood eating a few of the classic Little Debbie’s.
Southern Comfort Kourabiedes – Chef Tournant Garrett Pittler – A little Greek Parthenon inspiration on this one, also his grandmother’s specialty.
Spiked Sweet Music City Bar
Cookie (Bottom Layer)
1/2 cup Pulgra butter, room temperature
2 oz Semi-sweet Chocolate
1 large egg, lightly beaten
1 tsp Bourbon Vanilla Bean Extract
2 cups chocolate graham cracker crumbs
1 cup sweet or unsweetened coconut shredded
1/2 cup pecans, coarsely chopped
Custard (Middle Layer)
1/4 cup unsalted Pulgra Butter, room temperature
2 – 3 tablespoons Whisper Creek Tennessee Mocha Sipping Cream *
2 tablespoons instant vanilla custard powder
1/2 teaspoon Trablit Liquid Coffee Extract or any other coffee extract
2 cups powdered sugar
Chocolate (Top Layer)
4 ounces semisweet Chocolate
2 ounces White Chocolate
2 each Peppermint Candy Canes Standard Size Crushed
1 tablespoon unsalted butter
Pre-heat the oven to 350 degrees F. Butter or spray a 9 x 9 inch (23 x 23 cm) pan with a non stick vegetable spray.
Bottom Layer: In a saucepan over low heat, melt the butter. Remove from heat; add the chocolate stir until chocolate is smooth. Add the vanilla extract, chocolate graham cracker crumbs, coconut and chopped pecans. Press the mixture evenly onto the bottom of the prepared pan. Bake for 8 minutes in a 350 degree oven. Cool in a refrigerator completely.
Middle Layer: In your electric mixer, or with a hand mixer, whip the butter until soft and creamy. Add the remaining ingredients and beat until the mixture is smooth. If the mixture is too thick to spread, add a little more Whisper Creek Mocha or milk. Spread the filling over the bottom layer, cover, and refrigerate until firm (about 30 minutes).
Top Layer: Chop the chocolate into small pieces. Keep white chocolate separate. Then, in a heatproof bowl, over a saucepan of simmering water, melt the dark chocolate and butter. Melt the white Chocolate in a microwave safe bowl in intervals for 10 seconds at a time until is just starts to melt and is pourable. Keep warm. Spread the melted dark chocolate evenly over the filling; next marble the white into the dark before it sets. Sprinkle with crushed candy cane crumble. Refrigerate for about 10 minutes or until the chocolate has set. Using a sharp knife, cut into squares. Serve over the holidays with a great cup of coffee. Yield: Makes about 25 squares.
*You can substitute this with milk or coconut milk for a non-alcoholic version.
